Peri Peri Chicken
Ingredients:
1.whole chicken; greek joghurt
2.2 red peppers char grilled
3.2 red onion char grilled; 1 1/2 tsp smoked paprika, or plain paprika
4.4 cloves garlic, minced
5.1/2 cup lemon juice
6.1/4 cup red wine vinegar, or apple cider vinegar
7.4 small red Thai chilis, roughly chopped (more to taste for hotter sauce)
Instructions:

2.coat the chicken in the sauce and marinate for at least 2 hours
3.cook the chicken breast side down at 160c for 30 mins and 30 mins breast side up. Put aside sauce for basting and baste during the cooking time until internal temp reaches at least 73c.
4.Let rest for at least 10 mins.
5.Serve with side of the Peri Peri sauce and rice or chips and salad garnish.
